Costa Vida began with a simple belief: that fresh, vibrant Mexican-inspired food made with real ingredients could bring people together and transform an ordinary meal into something memorable.
Founded in Apple Valley, MN, Costa Vida was born out of a lifelong love for bold coastal flavors and family recipes passed down through generations. Our founders spent years traveling the Pacific coast of Mexico, discovering fresh fish tacos, slow-roasted meats, and hand-pressed tortillas that became the inspiration for everything we serve today.

From humble beginnings to a thriving community restaurant — here's how our story unfolded.
Founders Marcus and Elena Rivera return from a year-long journey along Mexico's Pacific coast, inspired by the vibrant street food culture they experienced. They begin developing recipes in their home kitchen in Apple Valley, sharing meals with friends and neighbors.
Costa Vida launches its first pop-up dining experience at the Apple Valley Farmers Market. The response is overwhelming — long lines, rave reviews, and a growing base of loyal fans who encourage the couple to take the next step.
Costa Vida opens its first permanent location at 15678 Pilot Knob Rd, Apple Valley. Within six months, the restaurant earns a "Best New Restaurant" mention in a local dining guide. The signature slow-roasted carnitas become an instant community favorite.
Costa Vida launches the "Fresh for the Future" program, partnering with three local Minnesota farms for year-round fresh produce sourcing. The restaurant also begins hosting monthly community dinners, building deep ties throughout Apple Valley.
A revamped menu introduces plant-based options, seasonal specials, and an expanded catering program. Costa Vida is recognized with the "Best Mexican-Inspired Restaurant" award by a Twin Cities food publication and celebrates its 10,000th guest milestone.
